Heat a heavy bottom pot with milk and Liquid Cheese 101 mix
Blend with a stick blender until just too hot to touch with your finger.
Add cheese one x handfull at a time (keep in mind the liquid cheese will take on the flavour of the cheese you add - my all time favourite is half Mozzarella and half Red Lester)
Blend with stick blender until all cheese has melted. Cheese should look silky smooth when complete. Immediately remove from heat and serve.
If using for catering, keep in a squeeze bottle in a sous vide bath. Refrigerate when finished and re-heat to serve.
