I recently did the beginners course at the Gold Coast. Being a “newbie” at smoking and the whole low and slow process I found the day to be invaluable. Steve, Cass and the team were more than willing to pass on all their years of experience. Sometimes you can read and watch as much as you like, but nothing beats the personal demonstration and actually tasting how the food should be. The course dispelled some common myths and showed that sometimes simple is best. I thoroughly recommend anyone starting out, or even experienced, attend the course. I attended both Brisbane masterclasses in 2018, and I went from a complete newbie who knew very little about BBQ to someone who can confidently cook the fundamentals. I'm not ready for brisket yet - but watch out, I'm coming! ### I had minimal exposure to BBQ before I took the courses. I'd used a Hark gas smoker previously, but felt like I had no idea what I was actually doing and needed some 101 training on the fundamentals. I knew diddly squat about heat, barbecue styles, charcoal fires, or even what "low and slow" was. I was confused about what type of barbecue is 'best' for what I wanted to cook. What's the difference between gas & charcoal? How big are the wood chunks? What does "the entry level setup" look like? Should all meat have a rub? I learned: - How to start a charcoal fire, and which fuel to use. - What 'low and slow' means, and the temperatures (and times) you want to aim for - Why Fahrenheit is the best choice for temperatures - The different types of barbecues (offset, reverse flow, bullet, etc) - Why the pros put a lump of wood on top of the offset box - When (and whether) to wrap the meat, and how to push through the stall (and what a stall even is!) - How to reverse sear a steak, and why it's a brilliant technique - And that delicious meat can be cooked by me, at my house, using these techniques. For complete newbies like me I recommend taking two classes, as strange as it sounds. The first class fills your head with knowledge and direction; the second class reinforces what you learned and gives you confidence to ask specific questions. Given this is a life-long hobby, a few bucks to learn & reinforce the fundamentals is a true investment. You could watch YouTube videos and read books, but there's something special about learning with the smell of BBQ in the air and the anticipation of the end product after your class. The food is, as you would expect, exceptional. Steve, Emily, and the team are passionate about their craft and sharing their knowledge. Their commercial experience is really on display in how they handle and talk about the cuts of meat, and their experience with cooking along the scale from backyard to festivals. They gave newbies like me the confidence to get our BBQ out and get cooking. The classes are a day of learning and then feasting. Pay for the education, stay for the deliciousness! I wish the team all the best, and look forward to many years of putting my new knowledge to good use.read more

I went to the recent masterclass hosted by Steve and Anton. I am a few years into the low and slow cooking technique and wasn’t sure what to expect. It was an awesome day and a great venue. Great insight into the butchering of the meat by The Two butchers Steve and then a chat about about pits by Craig from Bullockhead creek smokers. To say I took away some greater knowledge is an understatement. I would recommend this class to anyone interested in this style of cooking be it your first cook or if your a few years in. If your not interested in the cooking go for the food and a few cold beers it’s a great day. Thanks Steve and your team and I must give recognition to Emily she did not stop working all day a great effort. CHEERSread more
